I saw the idea somewhere online to write thank you notes for teachers on decorated biscuits. It is so genius, I can’t believe it never occurred to me before! So here’s how I made mine:
To decorate with royal icing, I just buy boxed ‘royal icing’ to which you add water. If that is not available where you live, you can mix icing/powdered sugar with a little meringue powder (500g sugar to 55g meringue powder).
Simply flood your cookie with the plain royal icing, and when completely dry and firm, draw the lines and writing with edible pens. So simple, but so effective!
Ingredients
200g butter
200g castor sugar
2 tsp vanilla extract
1 large egg
325g plain flour
1/4 tsp baking powder
Instructions
Cream together butter and sugar.
Add vanilla and egg and combine.
Add flour and combine.
Wrap in cling film and chill for at least 45 minutes, or longer if you can.
Pre-heat oven to 200c / 180c fan
Dust work surface with plain flour. Roll out dough to 3-4mm thick.
Cut our shapes and transfer to baking sheet with a palette knife.
Bake for 10 minutes, then leave on baking tray to cool for 5 minutes.
Transfer to cooling rack.
