Maple and Cherry Soda Bread

This sweet twist on the classic Irish soda bread, is flavoured with maple syrup and cinnamon, and studded with dried cherries for some punchy sourness.

The flavours are quite reminiscent of a traditional hot cross bun, and it’s just as delicious toasted and slathered in butter. Unlike a hot cross bun however, this soda bread is super quick and easy to make, and can be on your table and ready to eat in under an hour!

If you can’t get your hands on dried cherries, sultanas or rains are equally delicious.

Maple and Cherry Soda Bread

A sweet soda bread loaded with maple syrup, cinnamon, and dried cherries.

Ingredients
 
 

  • 400 g plain flour
  • 100 g caster sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 300 ml buttermilk
  • 2 tbsp maple syrup
  • 75 g dried cherries

Instructions

  • Preheat the oven to 180c / 160c fan
  • Place the flour, sugar, salt, soda, and cinnamon into a mixing bowl, and whisk together.
  • Combine the buttermilk and maple syrup, then add the wet ingredients to the flour.
  • Mix everything together until there are no more patches of dry flour.
  • Scatter the dried cherries over the top of the dough, and lightly fold through.
  • Transfer the dough to a lined baking sheet.
  • The dough may be a little wet – just shape it into a ball as best you can.
  • Cut a deep cross into the ball, that cuts about halfway down.
  • Bake for 30-35 minutes until pleasingly browned, then move to a wire rack to cool completely.

Thus soda bread was great with my dried sour cherries and Québec medium grade Maple syrup. I did add 56gr of diced cold butter in the flour mix though. It was great texture and it got devoured tonight at supper time . Thank you for sharing.
